Wisconsin Five-Cheese Bake

INGREDIENTS

  • 1 (16 ounce) package elbow macaroni
  • 1 cup shredded mozzarella cheese
  • 1 cup shredded Swiss cheese
  • 1 cup grated Parmesan cheese
  • 1 cup shredded provolone cheese
  • 1/2 cup ricotta cheese
  • 1/2 cup sour cream
  • 1/2 cup heavy cream
  • 1 tablespoon chopped fresh parsley
  • 1/2 teaspoon dried Italian seasoning
  • 1/2 teaspoon garlic salt

DIRECTIONS

  1. Preheat the oven to 400 degrees F (200 degrees C). Bring a large pot of lightly salted water to a boil. Add macaroni, and cook until tender, 6 to 8 minutes. Drain.
  2. In a large bowl, toss together the mozzarella cheese, Swiss cheese, Parmesan cheese and Provolone cheese. Remove about 1/2 cup for topping and set aside. In a separate bowl, stir together the ricotta cheese, sour cream and heavy cream. Season with parsley, Italian seasoning and garlic salt.
  3. Pour the ricotta cheese mixture and drained macaroni into the bowl with the cheeses and toss lightly. Do not mix too thoroughly, it's better left messy. Pour into the prepared baking dish. Sprinkle the reserved cheese over the top.
  4. Bake in the preheated oven until cheese is melted, about 10 minutes, then turn the oven to broil. Broil for about 5 minutes to brown the top.

Fruit Loaf

NGREDIENTS

  • 1 1/8 cups water
  • 1 1/2 tablespoons vegetable oil
  • 2 tablespoons brown sugar
  • 3 1/4 cups bread flour
  • 2 tablespoons bread flour
  • 3 tablespoons dry milk powder
  • 1 tablespoon pumpkin pie spice
  • 2 teaspoons active dry yeast
  • 3/4 cup golden raisins
  • 2 2/3 tablespoons candied mixed fruit peel

DIRECTIONS

  1. Add water, oil, brown sugar, bread flour, gluten flour, milk powder, mixed spice, and yeast into the bread machine pan in the order suggested by the manufacturer. Select Fruit setting or the setting for Basic White Bread. Press Start.
  2. If your machine has a Fruit setting, add the golden raisins and peel at the signal, or around 5 minutes before the kneading cycle has finished.

Fruit Hash

INGREDIENTS

  • 2 cups frozen whipped topping, thawed
  • 1 1/2 cups miniature marshmallows
  • 1 cup shredded coconut
  • 1 (8 ounce) can pineapple chunks, drained
  • 1/3 cup maraschino cherries, chopped
  • 3 tablespoons cold milk

DIRECTIONS

  1. In a large bowl, combine the whipped topping, marshmallows, coconut, pineapple, cherries and milk. Mix together well and refrigerate until chilled.

Fresh Tomato Salsa

INGREDIENTS

  • 3 tomatoes, chopped
  • 1/2 cup finely diced onion
  • 5 serrano chiles, finely chopped
  • 1/2 cup chopped fresh cilantro
  • 1 teaspoon salt
  • 2 teaspoons lime juice

DIRECTIONS

  1. In a medium bowl, stir together tomatoes, onion, chili peppers, cilantro, salt, and lime juice. Chill for one hour in the refrigerator before serving.

Peach & Almond Crisp

INGREDIENTS

  • Topping:
  • 1/2 cup rolled oats
  • 1/3 cup brown sugar, packed
  • 1/4 cup flour
  • 3 tablespoons butter, softened
  • 1 teaspoon cinnamon
  • 1/4 cup sliced almonds
  • Peach Filling:
  • 6 cups California peaches, peeled, pitted and sliced
  • 1/4 cup brown sugar, packed
  • 2 tablespoons cornstarch
  • 1 teaspoon almond extract
  • 1/4 teaspoon ground cinnamon
  • 1/8 teaspoon nutmeg

DIRECTIONS

  1. Preheat oven to 375 degrees F. Stir together all topping ingredients except almonds in a small bowl with a fork until it resembles coarse crumbs; set aside. Stir together all filling ingredient in a medium bowl and transfer to an 8- or 9-inch shallow baking dish. Crumble topping over the peach mixture and sprinkle with almonds. Bake for 30 minutes or until peach mixture is hot and bubbly and topping is golden brown.

Cola Burgers

INGREDIENTS (Nutrition)

  • * 1 egg
  • * 1/2 cup cola-flavored carbonated beverage, divided
  • * 1/2 cup crushed saltine crackers
  • * 6 tablespoons French salad dressing, divided
  • * 2 tablespoons grated Parmesan cheese
  • * 1 1/2 pounds ground beef


DIRECTIONS

1. Preheat a grill for high heat. When the grill is hot, lightly oil the grate.
2. In a medium bowl, mix together the egg, 1/4 cup of cola, crackers, 2 tablespoons of French dressing, and Parmesan cheese. Crumble in the ground beef, and mix well. Form into 6 balls, and pat into 3/4 inch patties. Pour the remaining cola and dressing into a small bowl, and mix well.
3. Grill burgers for about 3 minutes per side. Brush with the dressing and cola, then grill for 8 to 10 more minutes, basting occasionally.

Brown Sugar Smokies

INGREDIENTS
1 (16 ounce) package little smokie sausages
1 pound bacon
1 cup brown sugar, or to taste

DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C).
Cut bacon into thirds and wrap each strip around a little sausage. Place the wrapped sausages on wooden skewers, several to a skewer. Arrange the skewers on a baking sheet and sprinkle them liberally with brown sugar.
Bake until bacon is crisp and the brown sugar melted.
